docs: write v1.0.0 release notes (RELEASE-02, RELEASE-03)

- Installation instructions
- Known limitations

Also marks RELEASE-02 complete — update infrastructure already exists
in core/archipelago/src/update.rs with manifest URL, background
scheduler, and rollback support.
